Penne Pasta with Fresh Tomatoes and Basil
Serves 3
Prep time: 11 minutes; Cook time: 15 minutes
Ingredients
5 plum tomatoes cut up into small pieces-with seeds taken out
1/2 cup basil
1/4 cup olives (halved)
1 teaspoon garlic
1-1/2 teaspoons olive oil
1 tablespoon balsamic vinegar
1/4 teaspoon salt
Pinch of coarsely ground pepper
6-1/2 ounces Penne pasta, uncooked regular pasta (keeping the fiber lower for the marathon!)
1/4 cup crumbled feta cheese - or any cheese really!
Directions:
- Combine tomatoes, basil, olives, garlic, oil, vinegar, salt and pepper in a medium bowl and toss well.
- Let stand for 15 minutes.
- In the mean time, cook pasta according to package directions and drain well.
- Add pasta to mixture and toss well.
- Finished and enjoy with a bit of cheese on top!
